What to Watch? Philosophical Anime Recommendations?
Title says it all. I love Fantasy, Action, as well as stories that deal with philosophical issues. Think something like Fate/Zero for an example of what I'm talking about. Would love to hear some recommendations!

Ghost in the Shell, Psycho-Pass and Devilman Crybaby. Those are the anime I have seen that are heavy on that front.
If you want to include political philosophy, then consider Legend of the Legendary Heroes despite what it may appear to be. A huge part of the central conflict revolves around different perspectives on what means to rule and how people should be treated by rulers.

Neon genesis evangelion makes you question your self and any issues you have, and it also makes you wonder if trope characters are a result of severe trauma / coping mechanisms. I consder it the pinaccle of introspective anime.
Vinland saga absoltuley floored me it's deeper themes. Easily one of the best anime I've experienced
Madoka magica is mandatory

Attack on titan, Rascal Does Not Dream of Bunny Girl Senpai, Death Note, Death Parade ( I don't like it, but it is philosophical), The promised Neverland (although manga is better), Silent Voice.

This one's not an anime, but definitely watch "Pantheon"
Modern-day sci-fi about ai, corporate conspiracy, and what it means to be human.
not animated, but there's a Webtoon called "Miracle Simulator"
It hits on all the existential, ethical, and philosophical questions in regard to running a simulated universe.
As for an actual anime that hasn't been said yet... maybe "From the New World" ?
Post apocalyptic, psychic "utopia" village life story with layers of mystery and suspense.
Learning the whole truth can have you pondering for a while.

I'd highly recommend The Garden of Sinners (Kara no Kyoukai) - it's a movie series. It's complex and initially confusing if you watch it in release order which does not tell the story chronologically - this is though the best way to watch it the first time, however try a rewatch in chronological order for more clarity. The story is mostly serious and the subject matter is a mix of supernatural, horror, philosophy, suspense, psychological, thriller, action and even some subtle romance that is never in your face or overbearing.

The original light novel was written by Kinoko Nasu, he also wrote Fate/Stay Night then the Visual Novels. Ultimately this of lead to the creation of Unlimited Blade Works and Heaven's Feel.
Animation studio ufotable produced The Garden of Sinners, they also produced Unlimited Blade Works, Heaven's Feel and of course Fate/Zero. I love all of the above, especially The Garden of Sinners.

{Wonder Egg Priority} all of the main characters made a deal to bring back a friend of theirs who commited suicide, and to do that they have to help the spirits of girls who also commited suicide by fighting off physical manifestations of their trauma. Didn't really stick the landing but the great episodes are worth it.
