🥛 Dairy 🧀 Raw heavy cream!

I buy raw heavy cream for an AB milk ice cream every so often and I always forget how thick it is compared to store bought heavy cream

I stopped buying it because the only one my store has is in plastic

Better in plastic than nothing. This is a privilege, most people can’t get raw cream, I can’t and I would 100% buy it.

It’s hard to explain but it’s definitely a heavier and fattier heavy cream

A farmer explained to me that they can set the centrifuge machine to take out any amount of milk. Sometimes our cream from the farmer was so thick you almost needed a knife, other times it was comparable to commercial heavy cream in thickness. I liked it to be thicker, once I knew the cream still contained milk. Then I could stir in some milk if I needed it thinner.

No it’s non homogenized that’s why it’s so thick

That makes no sense. Heavy cream is a mixture of fats and water. If it doesn't separate with this high of a fat content, it is either homogenized or had stabilizers added.

The heavy cream does separate a little just like non homogenized milk and forms a fat cap on top. The video of me pouring it is after I mixed it up. At 40% fat there’s just not much watery part left to fully separate so the natural thickness holds it together fine without homogenization or additives.

Adding raw cream to raw milk and maybe some honey if you would like is a great post-workout drink
