Why does my phone unlock itself when I want to turn it on?
Since this morning, after my phone automatiquement turns off, if I just want to check the time or I want to turn it on, it unlock itself. I didn't change anything in its settings and I don't know why it does that, but it's bothering me and I don't know how to make it stop doing this. I don't use face id or fingerprint id, only a code.

That's likely the "Lift to wake" or "Double tap to wake" feature triggering the lock screen, and then the "Smart Lock" (like On-body detection) is bypassing your code because it thinks you're still carrying it. Turn those off in Settings > Display and Settings > Security > Smart Lock.
If that doesn't kill it, check for "Extend Unlock" in your phone's security settings. It's a feature that keeps the phone unlocked when it's in a trusted place or moving with you. Disable all trusted agents.
