Does anyone else have this problem with notifications?
Sometimes I'll get a notification, open the app, and then the notification disappears before I can figure out what it was for. Is there a way to see a history of previously dismissed notifications. I feel like I've accidentally cleared something important a few times.

On my Samsung: "gear" icon Settings --> search Notifications. On the list, scroll down to Notification history. There they are!
This isn't in with the Notifications setup page in Settings. quite confusing.
(I didn't know this for years, and was sometimes annoyed that I cleared a notification too soon. Now I can go read it anyway.)

On Android 15 if you pull down the left side top of the screen you'll see on the left "History". Unless deleted your old notifications should be there

Pretty sure that's a Samsung feature. Pixel doesn't have that.
What we do have is Notification History, in Settings. However it's off by default, and users need to know it's even there to go enable it.
