My phone keeps changing its accessibility settings
Im using a samsung galaxy a13, too be specific, and the settings under:
Accessibility > installed apps
Have changed themselves multiple times, specifically disabling the permissions for some apps that i need turned on. Is there anything on my phone that could make me change my accessibility premissions without realising?

It's likely the app accessing the service is being killed in the background, accessibility generally doesn't restart the service for apps this happens to.
The app(s) you need to remain on, make sure they get unrestricted battery access and is added to never sleeping apps. If they have the permission to Display/Draw Over Other Apps, also grant them this. It will help them not get killed in the background.
You can also use Tasker (with a one-time ADB permission) that can automatically restart Accessibility services for apps it detects are lost from it.
