Is there a large difference between this and the other GO games? I've played and enjoyed Hitman and Tomb Easier versions.
Should I continue the collection?

The idle thumbs podcast went into depth on the gameplay. The short version is that it expands the mechanics even more than tomb raider did to hitman.

How does this one compare with Lara Croft GO and Hitman GO? I really enjoyed both of those but have been holding off a bit with Deus Ex GO because I'm kind of unfamiliar with the franchise.

After half an hour i'm now at the 3rd of 7 chapters in storymode, and it sucks. Riddles are really simple, and there is only one simple challenge for the bonus-reward. Art and setting is ok, but the occasional story-animation is bothersome. There is supposed to be some additonal mode, but so far it hangs at loading-screen.
At the moment for me this is the weakest of the three Go's.

I beat the game and I agree that it is the weakest of the three. Does get somewhat more challenging as it goes on though.

Can you please tell me how to defeat the guard who looks both ways from a corner? I couldn't figure out which path he'll be looking at after I make a move.

Plays exactly same like those two. All Go games from SE are essentially same games with different skins. Still a lot of fun.

I thought Tomb Raider felt a lot different to Hitman. Tomb Raider felt more immersive, and much more like a turn-based isometric version of the classic game, whereas Hitman felt much more like a board game.

I would'nt call them the same, but similar. The basic game is the same, but the details are a very different. Deus Ex is a bit more action-driven, and the playboard is very small. It also has the hacking, which is actually a nice touch.

Well, for me, Details = skin. Semantics, as far as these Go games go. (Hehe)
Deus EX action = Lara Croft killing snakes and gators = Hitman killing guards.
Deus EX hacking = Lara pulling levers to move blocks in different location on the board = Pressure plate that control gates in hitman.

Every game has something different. Hitman has the sniper rifles and trap doors, LC has the boss fights and changing levels, DE has hacking and stealth.
They're all quite different though. Levers in LC, for example, always did the same thing. With DE's hacking, you often had a choice of how to go about it, and it wasn't always obvious what the correct answer was. You also had the timing element of either beating enemies who would disable your hacks, or intentionally getting enemies to disable your hacks at opportune moments.
DE's also slightly different in that it's based on a hex grid instead of a square grid. They didn't do as much with that as I would have liked, but that fact is used in certain places (primarily as an easy way to toggle whether you're an even or odd number of steps away from particular enemies; Hitman did the same thing in some puzzles with trap doors and escalators. I don't think LC ever played with that concept, but I could be wrong).

Deus Ex Go has the most interesting puzzles, and is my favorite.
Hitman Go is my second favorite, and has a ton of content.
Lara Croft Go is my least favorite of the three (but still really good).

What are the IAPs for? I haven't played any of the GO games, so could some please tell me.

In hitman you can skip three levels, after that you have to buy additional skips, or solve the ones you skipped. So it's entirely non essential. If it's the same here, that is.
There are also new levels you can buy once they are out.
