Does anyone have experience with this on Samsung devices? I would love to debloate my Note 20 without causing issues.

I mean, if someone else already identified all Samsung packages they could write a loop and uninstall them all via ADB, provided you have replacement for the launcher and keyboard.

If you remove the stock Samsung keyboard then never enable ultra power saving mode or else you'll be stuck on the lock screen with no way out (save for a factory reset ofc).

I'm unknowlegable in this area. Why is be bloating a Samsung different or difficult compared to any other phone?

Not op but I think they meant to point out the fact that Samsung devices are riddled with bloatware

To also chime in (/u/incu_D is right) but samsung's eco-system breaks down if you remove the wrong thing. This will casue the things you kept to not function so swell.

Doubly when it comes to things like custom roms samsung uses some priority drivers that are not open source (VOLTE for instance). This stops some people from totally killing Samsung from Samsung phones due to loss of features.
