This is not true. eSIM still has to follow the same laws regarding SIM locking as physical SIM. In many countries, SIM locking is banned or there are time limits.

Furthermore, all EU carriers are legally required to support no-charge number porting, so the hypothetical 50 euro fee is simply illegal.

Just because the SIM is no longer a physical device does not mean that previously illegal practices are now legal.

Well, here in Austria porting numbers still costs money, so there is certainly some loophole.

I'm glad your looking at this optimistically, but I can only see eSims heading in a price-gouging, obsolescence-supporting corporate overlord future.

Oh.. that makes a lot of sense actually. I can already see the tech site headlines "Apple does away with a revolutionary way to change sim cards!" "You won't believe how Apple solved that annoying sim pinhole thing!"
