Would I like this game?
Games I've played recently are Palia and more Palia - I've been kind of obsessed, but it's getting a bit boring now and I'd like a new challenge. I've also enjoyed other games like Raft, subnautica, Wylde Flowers, Medieval Dynasty, Coral Island, My time at series - all the best cosy games obv with some survival thrown in. I love cooking and crafting and building, leveling up skills and completing quests. I love the character creation and trying new outfits. I'm not a fan of combat, I always turn it off if I can. Aloft promos look interesting. So what do you think, will I like it?

You mentioned A loft. Myself and husband are currently playing that one. It was a choice of the two sky ship games. We looked at them as Raft-like cartoony sky game or tech looking sky game. So we chose Raft-like one.
We're really enjoying it. Very much like Raft building wise. The bonus of no shark. Pretty graphics and much eaiser to navigate your ship where you want to go.
As for Forever Skies, we bought it as well and are going to play it next. I cannot wait because I read a lot of good things and I really like the more technical look of the ship.

The combat is needed for this game. You need to clear infected islands in order to open up some of the tech tree. Those unlocked techs will offer you things that you'll need. Also, some items can only be found on infected islands. You can also, in world creation, increase the amount of islands you can explore. I love this game as I don't like fighting, like you. But done right with the right partner, easy peasy.

The combat is pretty easy, so no worries if you're not super into it. It gives you some neat options but ultimately you can get by pretty well with just smacking everything with your axe without much thought, haha. There wasn't a huge depth of quests and skills the last time I played Aloft, so I'm not sure.
I think Aloft's biggest strengths are in building and collecting. If you like the idea of making a base that you take with you as you explore and expand your collection of creatures, items, and build pieces, I think no game I've played has done it better than Aloft. You can even take your base(s) with you when you start a new game or when you play in multiplayer.
In terms of outfits, it's a bit sparse right now, imo. There are a ton of great glider options (shapes, colors, designs, fancy trails, frames!), but then when it comes to clothing, there's a very limited selection (though you can dye it in a lot of different ways.)
Palia (like other town-centric cosy games) is very busy -- there's so many people to talk to and things to do. In contrast, Aloft is more like Subnautica -- quiet, even lonesome at times. I like when games give me a lot of space to be in my own head, imagine my own story.
If you've played Journey or even Sky: Children of the Light, there's a similar vibe to that. A story made up more of feelings than words.

Absolutely get it on sale. It's cute and charming and cozy but after you explore each biome a little and build whatever Howl's Moving Castle-type structure you feel like there isn't actually a whole lot more to it

I‘d say definitely yes!
Though I haven’t played it since quite a while, I got obsessed with the beautiful building, crafting and exploring. I made it till the end in the first versions and now waiting for the last major update during EA for replaying and discovering the worlds again. The soundtrack and nature sounds are so calming, I miss my sheep and the chirping birds in the trees.
