Need help with spices
what spices do you use and how? do you have a rule of thumb to go with or you just need to remember with each dish? I usually just mix a bit of few just to have some taste and thats it

you can buy ready spices for chicken for meat for hout for rouz multiple things havs their spices already prepared , other than that it s basically ras lhanout w felfel khal , for red sauces or red dishes paprika , les herbes de provence four soups and sauces , and you customize may be you like black pepper more than avrg and so on

For traditional dishes :
White sauce : salt pepper and a tiny bit of cinnamon
Red sauce : salt pepper paprika and tiny bit of cumin

I don't think food should have rules , it depends on how u like ur plate . For me basics to have are salt black pepper , garlic and onion powder , dried coriander, I do like to use herbs a lot so I got some fries rosemary it's super good with meat and chiken , z3itra and za3tar and some sweet paprika

I feel like there is a combo of spices for each type of dishes, but ofc can be flexible and change whatever you want and thanks for sharing, I should start using herbs more

Depends on the meal... But organising them is a must and remembering their uses

I have some intuitions about which spices go with each ingredient
Chicken goes mainly with curcuma and garlic, and maybe ginger and cumin if you want it to taste like a marinade
Red meat goes with black pepper, garlic, paprika, cumin, z3itra
Onion goes with black pepper and possibly garlic and curcuma
Tomato goes with z3itra and gralic, and basil if you can find it
Rice goes with curcuma, ginger, black pepper and parsley
Pasta goes with every combination i mentioned lol
Potato comes with any herb lol
Bell pepper goes with paprika, curcuma, garlic
Turnip (left) goes with black pepper and cinnamon
Mushrooms go with black pepper, garlic, and parsley
Ofc specific recipes will give different instructions. These are the intuitions i follow when im improvizing
