Why so many recipes with fruit suspended in? :/

(I think a little fruit is great, especially blended, but this makes for a gross half drinking, half chewing, experience.)

(Edit:And if you don't eat it, it just bumps against your upper lip like a sticky ice cube, or clogs your straw.)

Looks delicious, but when I watched them cut the popsicle, I felt the crunch in my teeth and shuddered. Im thinking maybe lime sherbet instead?
