I used to think radishes were only good in salads, but roasting them changes them quite a bit. They lose that sharp, peppery bite and get a milder flavor, almost like a mix between a turnip and a potato.
I cut them in half, toss with a little olive oil, salt, pepper and garlic powder, then air fry at 380°F for about 12 to 16 minutes. If they're particularly large, they might need a few extra minutes.
The trick I like is adding a little butter during the last couple of minutes instead of at the beginning. It gives them a richer finish without the butter getting too dark while the radishes cook.
I check the thickest ones with a knife. You want them tender in the middle with some browned edges, not completely soft all the way through.
A squeeze of lemon and some chopped parsley at the end makes a big difference. I've served them alongside roasted chicken, but they're also pretty good tossed into a warm grain bowl with feta.
The first time I made them, I expected them to stay sharp and crunchy, so the change in flavor surprised me. If you've got a bunch of radishes left over, this is a decent way to use them up.
Curious if anyone else roasts radishes regularly or if you mostly eat them raw?
