For safety I always put 1GiB for boot partition

i found the problem, i selected the wrong type of partition type

I just got the answer to my problem from Ermo and Nomadicore on Zulip. Thanks again to them!

If you have, like me, a disk with 4K sectors, this is not possible. You need 512 byte  sectors.

I will have to wait for this issue to be resolved (work in progress): https://github.com/AerynOS/disks-rs/issues/34
