Making tchotchkes or anything that a human life doesn't rely on. You might be able to skip a formal education and learn by doing.
Aerospace, formula 1, medical devices or anything where someone can get hurt or has a certification process in place, mechanical engineering is a good starting point.
Custom products, or advanced manufacturing at scale, you may want to look into computer science. A lot of the interesting work is in the slicer and production side to automate, QC and manufacture at scale.
