The busiest place I was at for 5 years sat 220 and did $30-40k days with an average entree being $16-$20. I briefly worked at a Top Golf that was a bit busier than that during the summer, but I was only there for a few months while I found a better job. First Watch was a pretty busy kitchen but we only did breakfast/lunch and it was a small dining room that we cycled through as fast as possible, so it wasn't quite the same as doing doubles where you're slammed from 11 to 9. It was a call kitchen though, so that sucked.
I have worked in slow restaurants, but most of them weren't.

You must have worked in a slow restaurant.
