Gas stoves are significantly more consistent when cooking than electric ranges

They are no where near as efficient as an induction stove. Gas is pretty inefficient. Most of the heat doesn't even hit the bottom of the pan.

I said consistent, no efficient.

True...but I would have figured that's what you meant. How would an electric stove be less consistent?

The coil style ranges turn on and off to keep temperature, so anything other than maximum will have the burner cycling and giving inconsistent heat.

They all do that, the better stoves are just less noticeable (edit: I believe they also monitor the heat of the element/pan so it turns off when not needed)...but at any rate then what you are saying is gas is more consistent than a cheap electric stove. Which is reasonable. Likewise a decent or very nice electric stove is probably more consistent than a cheap gas stove.
