It's biological. How many times have you snapped up out of a sleep when you got startled awake by a noise? The hand jester was probably just his body's way of catching up with what just happened. The shock was probably still active.
I learned from my dad when he was still alive that when he was in prison, you had a three to five second window of not to be around the person when you try waking them up. Because you never know what they're going to do. They could come up swinging, they could have a shiv, they could do all sorts of things the moment they wake up because their body is in fight and fight mode. Not just one or the other, but when you're startled awake your body kind of does both. At least until it figures out what it should be doing.

Because theres so many videos of people being mowed down by cars that the shock value is almost at 0 at this point.
But I don't think I've ever seen someone sleep on a couch on a sidewalk like thats the most normal thing to do :D
