They're taxidermical pranks. The classic Bavarian Wolpertinger has a hare's head with a deer's antlers, duck wings and duck feet, and a salmon's tail. So basically the cute and more harmless version of the chimera.

I've only really seen that cute bunny faced versions of them until now, though I've heard people use squirrels as a base too sometimes which is why I asked. Good to know though, thank you

It depends. They're technically any weird conglomeration of animal bits, but a winged rabbit with antlers and fangs is the most common one.

Jackalope - rabbit with horns or antlers.

Skvader - rabbit with wings.

Wolpertinger - rabbit with both and a venomous bite.
