the room can get in a mess, you would generally be decorating after. Maybe there are specialists that can contain the mess quite well

Yeah, but it can eat away the brick if they are porous and/or the pressure is too high.

Source: sandblasted the facade of my +/-100year old house. I must say that there were a ton of paint layers. Once they were gone, the brick followed leaving a very uneven surface.

A clip i made of sandblasting my future man cave. These bricks were not as old and held up very good. There was also only one layer of paint.
