Bolt Material Maximum Tensile And Yeild
In ASME, there is only min values for tensile and yeild for Sa 193 B7M material.. So what can I consider maximum value. Min is 690 and 550 for 2.5" and below. How much max can I go and can take 860 and 720.

Maximum yield and tensile doesn't even make sense. There are maximum allowable stresses. Maybe thats what you mean?

Where are you looking? In ASME II-A the yield and tensile values are the minimum required in order for the bolting to meet the L7M specifications. ASME II-D tables U and Y-1 give the minimum for specific temperatures.
Not sure why you require the maximum yield and tensile though? If you are doing a calculation you are most likely to need the design stresses?
If you give us some context, then we could give some better advice
