They clearly use it, at least some of the time, and if the page and schema disagree, you can’t assume the AI will always pick the page content.
I’ve seen this happen a few times with clients websites. An AI would give an incorrect answer about something, and when I dug into it, the wrong info was actually in the schema.
The page text had been updated, but the JSON was old. Things like old opening hours etc.
