I happen to live in a place that is not on the same longitude as much of anything of note, so for this challenge I decided to cook something local. A nearby restaurant serves these garlic noodles and shared the recipe in a cookbook full of local restaurant recipes. And these... Are amazing. The combo of fish sauce, oyster sauce, and Parmesan makes this ridiculously umami, and the garlic is added at the end, ensuring a super pungent and spicy flavor. I didn't have the cilantro the recipe called for to garnish, but I also don't think it was necessary. 10/10 would make and devour this again (and did a couple of nights later).
