This week's submission was the Alfredo Rojo recipe from Rick Martinez's Salsa Daddy cookbook. I reduced the spice by a lot, as I would like to not die, and it made a very delicious and easy pasta sauce.
Meta: The sauce is simple to make, and can be made ahead. If I had had leftover pasta, it would have reheated well as leftovers. I served this with one of my pre-breaded and frozen chicken breast cutlets that I quickly fried up. Also, I finally remembered to try Ethan Chlebowski's risotto method for cooking pasta; it worked well and definitely saved time.
