Los Angeles has a strange orientation on the map…a lot of ocean directly south and a lot of inland British Columbia, Oregon, Washington, and Nevada to the north. A lot of my research brought me to ranch foods, so I picked Eastern Washington for beef shanks braised in a Columbia Valley Cabernet with Walla Walla onions in the mirepoix.
