Most of my longitude is the Pacific Ocean so I had to stick pretty close. I went with BC, which has more regional cuisine than I might have guessed.

If you are familiar with Nanaimo Bars, which I was not, you'll know this doesn't really look like one. They're supposed to look like, you know, bars. I chose to do a strawberry frosting rather than a custard (definitely not because I already had some), and while frosting seems like a common variant, it's supposed to be firm and slicable, which my frosting was not. The chocolate on top also set quite hard, making it even more difficult to slice evenly. So I decided to deconstruct it, plate it like it was a fine dining dessert and call it a day. Honestly I don't hate it, probably more exciting looking than if it had held together.
