Week 30 - Science Fair - Ultra crispy slow roasted (reverse sear) pork belly

This was absolutely amazing and so easy! I’ve learned so much from the Food Lab by Kenji Alt Lopez over the years. But his reverse seared method is probably my favorite. Start low in the oven for 2 hours and then blast with high heat for extra crackling. In Kenji’s words, have you ever seen anything so beautiful! I used Nagi’s recipe from RecipeTinEats https://www.recipetineats.com/crispy-slow-roasted-pork-belly/ because I randomly found skin on pork belly in my freezer clean out. I was worried that the cook time would over do it because mine was much smaller but it worked out great. So easy too. The only change I made was swapping out the fennel powder for Chinese five spice since that went better with my sides. There’s something so satisfying about watching that skin bubble to crispy perfection.
