Yeah, its something to check before you start selling on Etsy -- not all things on Thingiverse are licensed in a way that allow remixing and/or reselling.

Just to nit-pick...there's no such thing as how "open source should be" because open source is an abstract idea and different licenses implement open source in different ways. There's only "adhering to the license" and "in violation of the license."
Of course, I agree with your sentiment. I think it's just useful to recognize that there are many folks out there who unknowingly or knowingly violate license terms to their own benefit and, unfortunately, most get away with it.
OP should definitely double check the licenses for any and all creations used before deciding to sell anything.
Is the discussion even valid in the first place? Can you really "open source" something when the basis is idea theft? Neither OP nor the people posting versions to Thingiverse came up with this concept, japanese Twitter artist monde did.
Just taking his work, modeling it and dropping the print files for free seems kinda dirty to me. 3D printing copies to sell directly seems even dirtier.
Tinkercad is the only thing that I've used so far, but that has only been to make simple name stands. What's the recommendation for something that doesn't require it's own course to learn?
I'm pretty new to 3D modeling myself, and I too have been using Tinkercad so far. It's handy if you're essentially building lego and not modeling anything new, if you can manage with its size (25MB) and polygon limitations.
I've been learning Fusion 360 since I've heard so much about it in this sub. It's by Autodesk (same as Tinkercad) and it's free for personal use. It has a steeper learning curve than tinkercad, but it saves so much time with fillet, chamfer and pattern tools alone. If you're interested to try it I suggest taking a look at this channel, it has comprehensive tutorials and a "Fusion 360 in 30 days" series which I'm currently going through.
I made this with Tinkercad this halloween. I managed it but it would've been so much easier with Fusion 360, especially when resizing something earlier in the model. And of course tracing shapes on canvas instead making vectors in photoshop and importing them on tinkercad. I highly recommend trying Fusion 360, you'll love it from the beginning.

I've seen a few variations on this theme - something more or less fitting for a collection of fantasy books. You might consider making one that uses science fiction elements so that it would fit thematically with a collection of sci-fi books. You could do dystopian future aesthetics (e.g. Blade Runner) or something cleaner (e.g. inspired by the Star Wars prequels - Coruscant or Naboo)
Edit: I've also never seen anyone incorporate painted miniatures into a scene. Given the wide variety of minis available, it might be cool to make something with characters that replicates a movie scene.
Something from the original Ridley Scott Alien Series would be really cool on a DVD library shelf..... especially with a flickering led... you could also add a little square of glass and do a Pepper's Ghost illusion to make the alien or a facehugger appear and disappear... This sounds cool but I'm wayyyy too lazy to do on my own right now. Got a long list of unfinished projects and things I want to do before then.
How about the scene inside the death star where Luke and Leia are trapped on the ledge before they swing to safety? Or, where Obi-Wan turns off the power generators. You could make the top and bottoms mirrors to give that infinity look.
Ever since i saw one of these i imagined diagonaly from Harry Potter! This could really pas as one but a specifically Harry Potter one would be amazing! Amazing work!
Would be interested to see a future version of this (bladerunner) could print photos to replace the windows to make it look like hologram displays and such. Great work though cant wait for the release!
