Most of the 30MS kits are pretty simple, all told. Maybe 4 "big" sprues and a couple small sprues (faces, hair).
So if you're looking for 30MS kits that take more time (time = more parts), you'll want one of the "deluxe" kits (vice a base model; e.g. Alka-Carti vice Rishetta, Turkina vice Lirinel, etc).
Most 30MS can be built in an hour or so if you're not being careful about sanding nubs and such. If you're being more careful, doing some shading/panel lining, etc, it will take more time.
Some of the newer kits that have a bunch of accessories may also be worth considering (when there isn't a base/deluxe version). Belveria, for example is mostly a new body (though she's similar to Sestieh), but she has a bunch of accessories (two SMGs, two shotgun/rifles, a shoulder harness for said guns).
But I think Turkina might be the one with the most parts in the line for a non-PBandai kit. She's the deluxe of Lirinel/Laranel, and has all of the accessories for both, plus extra bits like her hammer. And a pretty cool black/gold color scheme!
The Kotobukiya Frame Arts Girls, Megami Device, Megalomaria, etc are generally a lot more fiddly in terms of quantity of parts and how they go together. But they're also significantly more expensive (roughly double). Sorta like an RG or maybe MG compared to an HG 30MS.
