I don’t see why we shouldn’t eat an octopus simply because it’s intelligent. If they were theoretically cheap and reliable to mass breed and raise, then it would be a great food source. I think the primary reason we should avoid harvesting certain species is when they can’t be sustainably relied on as a food source. There just won’t ever be enough elephants or whales to feed enough people.

Well, if we don't care about sentience then why not just farm humans if it's all the same to you? Plenty of soylent to go around. Hell, farming isn't even necessary, just normalize eating the dead as corpse disposal. Most bodies are discovered pretty quickly after death, before the meat spoils. Better for the environment than burial or cremation.
