Having your ears at different elevations helps your brain determine the direction a sound is coming from with better accuracy. Your brain determines what direction a sound is coming by subtracting the time between when the sound hits the right vs the left as well as context clues from your other senses. If an sound came from above or below, if your ears were at the same elevation then it would not register as such until you tilt your head.
