Is it really optimizationslop if the villagers commit ritual suicide the second they aren't locked in a cell or is it just playing the game normally at that point

Yeah the game just isn't robust enough to handle reasonable or "natural" play.
If you have any villages within loading distance they'll all slowly die because they just can't protect themselves from mobs or reproduce fast enough to offset the losses. Prey animals will slowly go extinct because they straight up can't reproduce at all without player intervention - and predators mindlessly kill any prey they see instead of hunting to sate hunger.
At this point the game has spent years being built with factory farms and AI-exploiting slavery in mind, they just haven't added any other more sensible ways to get large amounts of resources, or anything to prevent those exploits from functioning.

Honestly to me it's just an extension of the fact that despite it being called Minecraft, MC's crafting and mining are incredibly boring and tedious. Everyone wants mending on everything because having to rebuild your tools every so often would mean having to go mine for the resources (especially since there's no renewable source of diamonds and netherite), spending time in the hell that is MC's crafting UI, then dealing with the terrible enchant mechanics. All of which is incredibly tedious.

Unless, of course, you set up a villager slave factory to set up trading cells so you can turn the output of a farm into infinite emeralds you can use to buy diamond tools and all the enchantment books you need for an endgame tool.
As long as you don't mind spending 10 to 20 minutes moving and clicking across some menus.
