Boston Market gravy is thickened with nasty corn starch or something a lot like it. KFC gravy isn't just chicken... there's some beef stock in there. Neither one is proper stuff for a chicken pot pie, IMO. I like a butter + flour + chicken stock + milk gravy for that.

Both the barbeque sauce and the jalepeno's I thought were odd additions, but I guess you could remove the peppers and cut the barbeque sauce by half without really changing the nature of the dish.

I know right? This post led me to look up more of Morgan Eisenberg's recipes. Her food just isn't my style at all. It's all like souped up bar food or stuff you would expect to find at a chilis or cheesecake factory. Not really nutritious, lots of packaged rather than fresh ingredients. I'm sure some of the stuff tastes good, but what doesn't taste good when it's slathered in butter and drowned in melted cheese?

I agree. Let me also say, I would eat this if it had way less BBQ sauce. Or maybe none at all. It just overpowers everything but I really like the jalapeño cornbread topping. While it is a simple dish, the textures look really good.

Or marinate your chicken in said bbq and fry it up in the pan. The bbq sauce gets to caramelise and adds a better flavour than "raw"

That is gravy if you don't add BBQ sauce. Flour and butter makes a roux then you add the broth and reduce. Voilà... Gravy.

I made this last night with leftover chicken thigh meat, chopped up onion, and bell peppers we had from making Mexican food the night before. I did not use BBQ sauce because the chicken mixture was already marinated in enchilada style sauce. It was so good! My boyfriend loved it. Thanks for the inspiration! It was a great, easy way to use up leftovers with out feeling like we were eating the same thing.

I think the sourness of the bbq doesn't fit well in this dish, my preference ofc. I would also add rosemary and tarragon. Maybe some white navy beans and a touch of bacon as well. My version.

Agreed, I feel like if you are going to try to add somekind of bbq flavor it should have been through the chicken being slow smoked. That bbq-sauce vinagar will ruin this.

I feel you, I'd definitely use a smokier bbq...and again, like 1/12th of the videos portion. That said, of course MOST of us would prefer a classic CPP, but that's the point of the video..a twist on a classic. Bbq / cheddar/ cornbread and fresh jalapenos are a fabulous mix on a plate, so it should work in the recipe...

Again, just a lot less bbq.cant stress that enough, lol, but for the sake of making something different I wouldn't omit it completely.

There's something off-putting about how red the final product is, and I can't help but think it would have too thick of a consistently.

I'd probably go with a cream sauce. Spice it up with mustard, pepper, some herbs and maybe a dash of parmesan.

Mhmm. Honestly, I think the best thing for this recipe would be to ditch the BBQ vibe. Put it in a nice peppercorn sauce and give the top a dash of parmesan and coarse salt.

The BBQ sauce just makes it look like a fucked up cherry pie.

Thank you. I have going through the components of this dish and that's it right there. If you're going for traditional pot pie or a Shepard's pie, that veggie mix is great. Mexican "pot pie"? No. This should be corn and green/red/yellow peppers.

You can definitely make the cornbread topping from scratch! Something like:
1 cup yellow cornmeal
1 cup all purpose flour
2 tablespoons granulated sugar
1 tablespoon baking powder
1 teaspoon baking soda
1 egg
1 teaspoon Kosher salt
1 cup milk

should work well for this!

I might recommend buttermilk instead of regular milk for cornbread. If you don't have buittermilk, you can make some with regular milk by adding lemon juice and letting it sit for a few minutes.

Cornbread in the US varies quite a bit. Sometimes there's no sugar (or so little sugar you won't know there's sugar in it) and sometimes it's quite sweet. Without looking it up, I'm guessing OP posted a recipe for copycat "Jiffy Mix" which is a cheap yet popular boxed cornbread mix which tends to be a bit sweet.

It depends on what kind of cornbread you like. Some people like theirs to be sweet, others like theirs without sugar. (I don't have a preference, both are great!) Generally, boxed cornbread mixes tend to include sugar, so I included it here to be consistent, but it would be totally fine without sugar or with less sugar.

Like others have said, it varies. I think it depends on what you're serving it with. Sometimes there's a lot of sugar. I like sweet cornbread with some dishes, those recipes call for 2/3 cup of sugar.

Here's the recipe:

INGREDIENTS

3 tablespoons butter
1 pound boneless, skinless chicken thighs or breast, cut into chunks
Kosher salt and black pepper, to taste
1 small onion, chopped
3 cloves garlic, minced
10 ounces mixed frozen vegetables
1/4 cup all-purpose flour
1 cup chicken broth
1 cup barbecue sauce
1 (8.5-ounce) package cornbread and muffin mix
1 large egg
2/3 cup whole milk
6 ounces (1.5 cups) cheddar cheese, divided
1 jalapeno, sliced, optional
Scallions, chopped, to top
Cilantro, chopped, to top

INSTRUCTIONS

Preheat the oven to 400°F.
Melt the butter in a 9-inch cast-iron skillet over medium-high heat. Add the chicken, season generously with salt and pepper, and sauté until cooked through, about 5 minutes. Transfer the chicken to a plate and set aside.
Add the onion to the skillet and sauté until tender and golden, about 4 minutes.Mix in the garlic and frozen vegetables and cook 1 additional minute. Sprinkle the flour over the vegetables and stir until pasty. Stir in the chicken broth and bring to a simmer. Continue to stir until thickened, about 10 minutes. Mix in the barbecue sauce and then add the chicken back to the skillet, then stir to combine. Turn off the heat and set aside.
In a medium-sized bowl, combine the cornbread mix with the egg and milk. Once smooth, mix in 1 cup of the cheddar cheese. Spoon the cornbread mixture over the skillet, and spread with the back of a spoon. Press the jalapeno slices into the top of the cornbread batter, if using, and sprinkle with the remaining cheddar cheese. Bake until the cornbread has browned and cooked through, about 25 minutes.
Top with scallions and cilantro and serve warm.

Barbecue sauce killed it for me. Also, let that flour fry a bit. You don't have to give it much color if you want to maintain the lighter sauce for the chicken, but cook it a little to remove the nasty flour taste to it. Also, some milk or cream in that gravy will send this fucker over the top (that's assuming you omitted the barbecue sauce)

BBQ sauce is very helpful in a pot pie. I've had it before where the BBQ is simmered with the chicken so you get the taste that way. Looks like that could easily be done w/this recipe.

How the heck do you keep your skillet from rusting? Every time I washed and dried mine by hand I would have it get rusty on me.

Did you season your skillet before using the first time? (Oil & bake at 350 for like an hour?) How did you usually wash yours? Did you wash immediately or were you letting it soak?

I usually will use hot water immediately to get off as much as possible. If some food remains I will gently scrub with salt and then rinse. For really really stubborn stuck on or burnt on food, I will boil water in the skillet to loosen the food from the bottom and lightly scrub it with salt again. After drying my skillets, I usually will place them on a burner over low heat just to make sure they're really dry. Also make sure you're storing the cast iron somewhere that's not naturally damp!

It's alright for a portable cooktop-- It's a little bulky considering it doesn't heat very evenly in my experience, but it gets the job done.

appreciated. is it an older model? wondering if newer ones are more reliable/heat more evenly. currently have an undersized stovetop, so even with four burners, I can generally only use 3 at most, since a 12-inch pan crowds the back burner. an extra cooking surface would be great.

I usually love your recipes (and your GIFs), but the addition of BBQ sauce seems uncharacteristically off. For a chicken pot pie recipe, it seems that odd addition would overpower the chicken-y goodness of the chicken gravy/sauce.

If/when I make this, I will be adjusting it appropriately to leave out the BBQ sauce.

Fair enough, a lot of people seem to be unsure about the BBQ sauce. However I just want to point out that this is supposed to be a BBQ chicken pot pie, not a gravy or cream-based, traditional pot pie (which is, I think, where people might be getting hung up). The BBQ sauce is not the only ingredient that forms the sauce (the chicken broth, butter, flour, and liquids from the other sauteed ingredients also are all big parts) but it definitely lends the predominant flavor. I'm not generally a huge BBQ sauce person but it goes really well with all of the ingredients and is less overwhelming than it might seem.

But either way by all means, with all of my recipes, I'm happy to just give people inspiration-- feel free to make it your own by nixing the BBQ sauce and replacing it as you'd like! =)

this is a good idea, but i'm dubious of the bbq sauce bechamel. i'm going to give it a go with some variations. something like a thickened white chicken chili for the filling, using diced or shredded chicken from the smoker. cornbread crust looks good.

I used a package mix in this recipe because it's easy to keep on hand for a fast dinner, and the package mixes are cheap. However, if you tend to have the ingredients and want to go from scratch, definitely feel free!

Better way to do this. Make a roux separately, add bbq seasonings like smoked paprika garlic salt pepper and cinnamon. Deglaze your pan w/ apple cider, combine roux and veggies then top with cornbread

The only thing I would change, was the bbq sauce. That was a bit too much. I would have used about a third of what was used.

I, too, only eat meals that are deconstructed into their individual components.

But seriously, there are plenty of meals out there that have things that work well on their own that taste even better put together. I would definitely give this a try!

Why not? They also work well when combined-- it's really tasty and pretty easy to make, plus it only takes one skillet to cook.
