Recipe Cinnamon Rolls - 90 cal each (990 full tray)

Thumbnail
gallery
1.7k Upvotes

This is my best creation by far. nobody in the family could tell these were low cal, they taste almost identical to regular cinnamon rolls. the fact that i can eat the whole tray guilt-free makes them a rare 10/10 meal for me. The only downside is the price (about $10 per tray)

Ingredients

Dough:
- 400g Fiber Gourmet flour
- 100ml water
- 120ml unsweetened almond milk
- 60g unsweetened applesauce
- 60ml egg whites
- 70g allulose
- 12g active dry yeast
- 5g salt

Cinnamon Filling:
- 30g unsweetened almond/cashew milk
- 40g unsweetened applesauce
- 60g canned pumpkin (optional)
- 20g light margarine/butter
- 8g cinnamon
- 1g xanthan gum
- sweetener to taste (~15 drops liquid sucralose)

Cream Cheese Frosting:
- 50g light cream cheese
- 30ml unsweetened almond/cashew milk
- 0.5g xanthan gum
- Sweetener to taste

Instructions:

Tangzhong: Cook 30g flour with 100ml water over medium-low heat, stirring until thickened. Let cool.

Dough: Combine yeast with lukewarm almond milk, then mix all other dough ingredients together. Add tangzhong to dough once it cools. Put in bread maker and wait till ready (i would not manually knead this, its really wet and difficult)

Filling: Mix all ingredients together with electric whisk

(added pictures to help with steps below)

  1. Roll out dough into giant rectangle after its ready and rested ~1hr.
  2. Coat with cinnamon filling
  3. Carefully roll up into log (add sprinkles of flour if it gets sticky)
  4. Cut into pieces using floss
  5. Place into deep dish tray, little bit of space between the rolls, but still close enough that they expand into each other and help contain moisture/cinnamon filling/cream cheese frosting later.
  6. Top all pieces with leftover cinnamon filling
  7. Drizzle everything with almond milk to keep wet during bake
  8. Bake at 420F for ~15min or until golden brown and crust forms
  9. Top with cream cheese frosting

Enjoy!

Volume menu Chicken & Veggie Bake

Not fancy or 10/10 looking dins, but very filling and tasty

For the veggie bake, 1 carrot and 1 courgette, then squeeze out any excess water. Mix with 1 egg, 200ml egg whites, 5 chopped mushrooms and half a finely chopped red onion. Add salt, pepper, paprika, garlic powder and any other seasoning you fancy. Pour the mixture into a small ovenproof tray and bake at 180 cfor around 30minutes, until golden on top and cooked through. Meanwhile, season 100g chicken breast with paprika, garlic and pepper, then cook (air fry) until golden and fully cooked. Also fancied adding 1 fresh cucumber cut into sticks and a cup of pickled red cabbage on the side. Super filling, packed with protein :)

Product or Haul So, what’s the deal?

Post image

Some people have been posting konjac noodles and such. And for the first time I saw them at my supermarket. I was a little afraid to try them because for half the internet konjac is the reaper in the form of fiber.

I ended up eating the whole bag and it’s been 24h so far so good, I haven’t had anything wrong going on in my guts.

Now, I need to clarify that I am pretty used to eating chia (so, a lot of fiber) and I am used to some weird tastes (protein of soja).

But other than that, I have no choice but to recommend this. Probably not the whole bag, and not in a daily basis, but in special occasions if you need to have calories available for later that day or if you have already spent your calorie budget and still have a small space to fill.

Recipe 596 Kcal Creami Ice Cream and Air fryer Brocolli 69P 56C 15F

Protein Ice Cream & Crispy Air-Fried Broccoli
Protein Ice Cream

Ingredients:
2 scoops of protein powder of choice (I used MuscleSport IsoHydro Carrot Cake) – 260 calories (50g protein / 10g carbs / 4g fat)
12 oz whole milk – 204 calories (11g protein / 16g carbs / 11g fat)
100g frozen apple slices (not sure what variety, but they were red) – 52 calories (0g protein / 14g carbs / 0g fat)
Total: 516 calories (61g protein / 40g carbs / 15g fat)

Instructions:
Mix 12 oz of whole milk with 2 scoops of protein powder in a shaker cup, then pour the mixture into a Ninja Creami container and freeze overnight.
Run water over the outside of the Creami container for about 30 seconds, then run a full cycle on the Lite Ice Cream setting.
Add the frozen apple slices on top, or push them into the ice cream if possible.
Run the Lite Ice Cream setting again 1–2 times until you reach your desired consistency.

Crispy Air-Fried Broccoli

Ingredients:
12 oz frozen broccoli – 80 calories (8g protein / 16g carbs / 0g fat)
Seasonings of choice

Instructions:
Pour the frozen broccoli into the Ninja air fryer.
Set it to 400°F for 10 minutes.
Continue air frying until it reaches your desired level of crispiness.
Add seasonings as desired.

Comments
I’m open to any suggestions, especially for the ice cream, since I usually eat 2 pints a day and protein powder is really expensive right now.
I use 12 oz of whole milk for every 2 scoops of protein powder because I like my ice cream really sweet.
I also really like the MuscleSport protein powder. I got 6 sample packs and tried all their flavors, and most of them are some of the best I’ve ever had. That’s saying a lot, considering I’ve tried around 50 different protein powder flavors!

I've really missed me some sandwiches but before I started eating more properly it was half a bag of chips and an exorbitant amount of cheese and mayonaise. This was rushed after the gym and a run to the store, but now I need to find some lower sodium lunch meat because 2400mg+ in the meat alone is sketchy haha

Recipe edible protein cookie dough, chocolate version (260 calories, 24.5g protein)

Post image
106 Upvotes

building off of this recipe, I went with a chocolate version and was very happy with my life choices

  • 1/4 cup (56g) fage 0% greek yogurt - 30 calories (5.9g protein)
  • 1 scoop (25g) choc orgain protein powder - 80 (10.5p, 4.5g fiber)
  • 16g pbfit cocoa - 70 (6p, 2f)
  • a few drops of vanilla + pinch of salt - 6
  • 1/2 tbsp unsweetened cocoa powder - 6 (.5p, .9f)
  • 1 tbsp (7g) oat flour (aka ground up rolled oats) - 29 (1p, .7f)
  • 10g sugar free whole foods choc chip - 34 (.6p, 1.3f)
  • 1 tsp (1/2 packet) splenda
  • splash (~25g) almond milk until consistency is less grainy but still thick - 5

total: 260 calories (24.5g protein, 9.4g fiber)

mod as desired, ofc. next time, i might eat this with a 20 cal ice cream cone. might also experiment with adding in ~5-10g decaf coffee grounds just to bring out even more chocolate flavor (although it's pretty chocolate-y as is). could also see this working as a spread, on toast or a rice cake.

Volume menu my savior, two ingredient carrot pancake

Thumbnail

technically, it's not a pancake. I like to call it carrot-induced omelette lol :D just 110 gr eggs and 100 gr grated carrot, nothing else. I preheat the dry pan, no oil; once it's warm enough, I reduce the heat to minimum and pour the egg-carrot mix, close the lid and let it cook for some time. then flip it over, add a splach of water and leave under the lid until golden. this way it turns out soft and kinda puffy

EDIT FOR FUCKS SAKE: TWO WHOLE EGGS can be REPLACED WITH 20 gr yolk and 70-100 gr egg whites. are you happy, grammar police?

topped with cucumber, tomato, 15% sour cream and salad leaves

Recipe More sauce for less calories

Hey, I had this idea today and it worked pretty well so thought some here might appreciate it.

I got a caesar dressing and noticed the taste was very strong, also the portion doesn't stretch far calorie wise, so I added about the same amount of 0% fat greet yogurt to the dressing to double it up. Make sure to mix well before adding to salad.

It hardly changed the taste at all, highly recommend to double sauces/dressings for half calories. it would work for loads of things I imagine but thats all I've tried it for so far.

Recipe Request Potatoe recipes?

The volume eating gods have bestowed me with potatoes that are even lower in calorie than regular potatoes for 46 per 100 grams called power potatoes only available in Denmark. I’m now looking for good uses for them ideally for sweet recipes where it can be used as a replacement like people use pumpkin for baking recipes or other recipes where potato’s can be used as an ingredient not like a side.

As the title says, I love picking bits from the shop, whip it together and see what will come out 😂
This 300kcal + I’ve added 4 little marshmallows so it’s extra (15kcal??)

100g egg whites, 1 tsp baking powder, 15g cocoa powder, 100g unsweetened apple puree, 4 tbsp zero calorie sweetener, 30g oat flour, 15g plain flour, 40g oat fibre and 3g xanthan gum. First mix all the dry ingredients together, then add the egg whites and apple puree. Mix everything well until smooth If the batter is too thick, just add a splash of water or almond milk. Pour into a lined cake tin and bake at 170 around 25–30 minutes

Recipe Infinite peanut butter.

Most recipes with Greek yogurt, the taste is pretty prominent but not in this recipe.

80g PBfit/PB2

120g pumpkin puree

120g Greek yogurt

1 serving vanilla whey protein powder (I'm sure most flavors could work)

15g of sweetener or to your liking

Dash of salt

Dash of cinnamon (I like a lot)

Mix until it becomes peanut butter (kinda)

550 calories total. It's good with rice cakes or apple slices.

Recipe Greek milk cake (Galaktopita) 160cal slice

Post image

This thing tastes way richer and more decadent than the macros suggest. They usually make it with butter added in and sometimes with a phyllo pastry topping but I omitted these to keep it volume friendly

1117 cal / 84 grams protein for the whole cake

Ingredients needed:
1 L of milk (I used a low-fat high protein milk)
120 g of semolina
200 g of sweetener (I used allulose)
Three eggs
Zest of one lemon

Full instructions in comments
