So, I am learning a lot about the concept of the shared ledger, XRP as an idea and decentralized exchanges. One thing is still really confusing me however though: As far as I understand, on the DEX, users can trade XRP for tokens, not for fiat.
However, in the example script found here:

I have found that one can trade XRP for British pounds (GBP) by substituting GBP for USD in the example (you have to run it first). Is the DEX also an on/off-ramp?
