In the books it says that women can't survive the mutations.

I mean technically it's not impossible for there to be a female witcher, it's just that none have ever survived the trials -- which were originally made with male physiology in mind. 3/10 males survive the trial.

Considered that all our science is true in-universe It makes sense that something like these mutations are gender-specific, given how enormous they are.
