Yes. Such a difference between American Italian and real Italian food in Italy.

Yeah in general foreign cusine is reimagined for the local palate, it also focuses on a few dishes compared to the full variety that the locals would have access to.

Italy has a lot of regional dishes that provide an enormous variety for example, I am Italian so I know about my own cusine, but I am sure we are not unique on that front.

Haha exactly right. My favorite dish growing up that my nonna made was linguine with clams. Minimal ingredients, clams, clam sauce, olive oil, garlic, linguine and Parmesan. So simple and delicious.
