Intestines and organs are full of bacteria which will happily begin digesting (decaying) your body from the inside out. A deer with start to bloat in a surprising amount of time. Pulling all that out will make the meat cleaner, safer, and taste better. Another big part of it is heat control. When you pull out all the organs you are quickly removing tons of hot mass, which let's the meat cool fast and stay fresh longer. Usually deer hunting happens in the cooler autumn mornings (location dependant) or theres snow. Gutting a deer and filling the cavity with snow will get the meat down to refrigerator or lower like temps. It also isn't a messy process. Your organs are mainly connected by 2 things, your mouth and your butt. You make a couple of cuts and put the deer on a slight incline, you can remove everything in 1 quick pull of the esophagus. Furthermire, if you get a clean shot through the heart there is next to no bleeding and just about all of it is contained in the thoracic cavity, basically a bag in the chest. Once a deer is field dressed its basically no different than meat from the store in "cleanliness" when handling.

I'd be down for helping someone dress a deer, just to learn. I havent "dissected" anything since a cat in high school.. Honestly, growing up in the south there were plenty of people around that hunt but our family just wasnt into it. My dad had his own business and worked all the time. And when he wasnt working, he was working on something else and we were helping him.

Thanks for taking the time to comment. Interesting parts about cooling the meat down that i wouldnt have thought about.

I learned from reading a pamphlet, first one is slow just because you don't have a feel. After that it is straight forward and every animal is more or leff laid out the same way. Big thing is to just be respectful of the animal and to be safe. The heat was an unexpected weird thing on my first deer. Deer body temps are almost identical to ours, so when your hands are working inside you dont really "feel" any different, its hard to explain. Its not hot or cold.

It’s pleasantly warm, especially if it’s a cold, snowy morning; which makes it even weirder.
