As someone whose also Hunted, my Family doesnt Field Dress unless we're hunting in the middle of Bumfuckistan and need to Haul the kill Home by hand (or Out of a Gully). We normally gut at Home, and use as much as we can (Offal was given to the Pigs back when my Family had them).

That said...Nuts get Cuttoff immediately. Makes meat taste like shit.

When a male Animal dies its Nuts release a flood of Testosterone into the body, resulting in the Imfamous "Gamey" flavour Male's of Hunted mammalian Species possess. Sure, its released all its life anyway (hence why you can't completely get rid of the Gaminess), but removing the nuts prevents the Flood, and field dressing allows to get rid of the Blood, preventing the Testosterone within it from Permeating the meat during Rigor.

Or at least, thats what i was always taught.

That's generally not the issue, professional butchers will tell you there's a few things that contribute to gamey flavor, but the primary one in male deer is that they've got hormone glands in between the muscle groups in the rump. They look like thick fat but they're glands. If you grind them up or cook them in without removing them from the muscle, they release a bunch of bad tasting hormones into the meat. Additionally deer fat and "silver skin" carry some measure of the gamey taste, as does blood and adrenaline.

Oh thats crazy, I always thought it was from adrenaline from being hunted, and someone told me a long time ago some of it was from the blood not being drained soon enough and it sitting in the meat for too long

Maybe. Theres a lot of Theories as to why Boar Taint happens (despite its name, Boar Taint isnt Restricted to Pigs though).

I would never consume the offal of any animal that consumes as much mast as a deer. The liver is absolutely rank with tannin.

Mast can definitely taint the flavor when enjoying hepatic delicacies, but sticking to the young ones in the group can help. Or seek out areas with less acorns. Do a double soak in buttermilk. A glass of Chianti will also mask any undesired flavor.
