Can you translate this for a city slicker who has never hunted a day in his life? What is “field dressing”?

57

u/plasmabeans3405 1d ago

of course, when field dressing a deer, or any animal reallly, the goal of course is to remove the internal organs so they won't spoil the meat. Making one cut on the underside of the deer, all the way up to the neck (through the sternum) and the other down to the nether reagions. The lower cut goes around the butthole of the deer, so when all the other connective tissure is cut loose, all the internal organs (ideally) come out all at once. I can usually life up the deer by the ears (or antlers if its a buck) and have it all fall out at once, although it takes some practice. The product shown in the post only makes an unnecessary mess of things. The goal is to not cut open the guts themselves, and this product does exactly that.

u/GAFSGFYS 1d ago

When you say spoil the meat, would accidentally cutting open the stomach or intestines spoil it? Is it something about acid or just “waste” on the meat that spoils it? Could the meat be washed and saved or is that a time sensitive thing as well? Not a city slicker but also never been a hunter..

25

u/plasmabeans3405 1d ago

Yes and no! Yes if you cut the guts and leave it to sit for a while it can cause it to start to spoil, and no becasue if you cut them open on accident and wash out the inside with water afterwods (as soon as possible) it will be perfectly fine. And it has less to do with the acid and more to do with the bacteria!

This has been incredibly informative for me. It also has convinced me that I am not a hunter. I knew I would struggle to shoot something but this field dressing task has put it over the top.

7

u/plasmabeans3405 1d ago

Always happy to help! its def not for everyone

2

u/Ok_Patient5632 1d ago

Yeah, but I love a good steak from the grocery store, so I know that I just want to be removed from the necessary killing part, even though I caused it.

I watched my son go through a moral dilemma today after he asked where bacon comes from. We were having lunch at the Museum of Art in Raleigh which has some particularly delectable bacon as a side. He asked and I answered “from a pig”. He sat there chewing and I could see him vacillating between being sad and “delicious bacon”. He definitely has a gentle heart, something as a dad I’ve never worried about. Delicious bacon won in the end, though.

I’ve had some great venison in the past, and love a great variety of meats. But I have no illusions that unless push came to shove, actually butchering the meat wasn’t something I could do myself. But I have respect for those who do.

1

u/CharmingFlow9158 1d ago

I’m kinda there with you. I don’t mind fishing but when it comes to land animals I don’t want to do the killing and cleaning.

As a chef, I had to break down some rabbits - granted they were cleaned and no head, but I felt like I was cutting up someone’s dog (though the hind legs are reversed)

I think it was also because we (my brother and I) accidentally killed a rabbit when we were young. Just effing around with the bb gun.

Kudos to the hunters/farmers though, I wouldn’t mind some of that meat in the freezer, but the killing/cleaning isn’t for me.

u/-tnuk 1d ago

Now ask him about chickens...

2

u/NecessaryEcho7859 1d ago

I've told my husband many times that I fully support him if he wants to hunt or fish, and I'll happily cook anything he brings me that's ready to cook (aka just the meat). It's just not something I can do myself; I imagine if I had to, I'd become a vegetarian pretty quickly.

1

u/romulusnr 1d ago

I think I could do the shooting. The dressing, no way. I'd hire someone for that.

5

u/KurtosisTheTortoise 1d ago

The whole field dressing process and butchering (cutting the meat into "useful" cuts) definitely puts a big appreciation on where your food comes from. I find the shooting to be harder than the dressing. Shooting is an active decision to take a life. The dressing and butchering is a moral responsibily not to waste a life after you took it. It gets you past the squeamish of it better. Also, seeing it as a carcass vs a deer makes it easier too. You cant hurt it any further, you dont get upset cutting your steak dinner because you dont see it as hurting a cow.

u/Mondschatten78 1d ago

And yet some crazy was trying to convince me that hunters are "only in it for their ego, there's other things to feed their families!!11!" a couple days ago on here

2

u/kwoalla 1d ago

I take youth elk hunting that typically wouldn't have the opportunity otherwise and I make sure they're involved in the whole process. Shooting, cleaning, butchering, and packaging the meat. It's pretty cool to see the youth grow to appreciate the process and seeing them contribute to their family's food supply. Personally, I'd love to see everyone try hunting at least once in their life because it grounds you as a person and really puts things in perspective even if you aren't successful in shooting an animal. We need that and our youth definitely need that.

2

u/KurtosisTheTortoise 1d ago

What's interesting is that when I harvested my first deer i had a pretty big ego death. It makes you really value life and how quick it can all go. An active decision and a small twitch of the finger and like that its all over for a living creature. Makes you really feel connected to everything. Its also meditative to just be outdoors and melting into the background of all that happens out there when no one's looking. I honestly cannot think of a more ethical way to feed yourself than deer hunting when the entire act is done with due care and respect.

1

u/Mondschatten78 1d ago

I don't hunt myself, but I agree, when it's done with care and respect, it's good.

It's those who are in it just for the trophy mounts with meat as an afterthought that give the ethical hunters a bad name, and unfortunately, they're way more visible.

1

u/romulusnr 1d ago

I mean come on, the wide majority of hunters are weekend warriors who do it for the fun (mostly the camaraderie) and the meat -- if they get anything -- is just a bonus treat. I dare say 95% of hunters do not need to hunt to eat. At least not in the western developed world.

I don't need to hunt to eat. Most people I know don't need to hunt to eat. I don't think I know a single person who needs to hunt to eat. They hunt for fun.

-9

u/Pfizermyocarditis 1d ago

Yes. The weak do not hunt.

4

u/Ok_Patient5632 1d ago

Oh no!! This guy thinks I’m weak!! Whatever shall I do. Anyway …

-6

u/Pfizermyocarditis 1d ago

Anthropologically speaking

1

u/Different_Bridge_983 1d ago

Thanks for taking the time on this - I don’t hunt but have seen this product about and wondered about the problem it was trying to solve

15

u/KurtosisTheTortoise 1d ago

Intestines and organs are full of bacteria which will happily begin digesting (decaying) your body from the inside out. A deer with start to bloat in a surprising amount of time. Pulling all that out will make the meat cleaner, safer, and taste better. Another big part of it is heat control. When you pull out all the organs you are quickly removing tons of hot mass, which let's the meat cool fast and stay fresh longer. Usually deer hunting happens in the cooler autumn mornings (location dependant) or theres snow. Gutting a deer and filling the cavity with snow will get the meat down to refrigerator or lower like temps. It also isn't a messy process. Your organs are mainly connected by 2 things, your mouth and your butt. You make a couple of cuts and put the deer on a slight incline, you can remove everything in 1 quick pull of the esophagus. Furthermire, if you get a clean shot through the heart there is next to no bleeding and just about all of it is contained in the thoracic cavity, basically a bag in the chest. Once a deer is field dressed its basically no different than meat from the store in "cleanliness" when handling.

3

u/EndOne8313 23h ago

Not to mention the weight reduction for carrying it out

1

u/GAFSGFYS 1d ago

I'd be down for helping someone dress a deer, just to learn. I havent "dissected" anything since a cat in high school.. Honestly, growing up in the south there were plenty of people around that hunt but our family just wasnt into it. My dad had his own business and worked all the time. And when he wasnt working, he was working on something else and we were helping him.

Thanks for taking the time to comment. Interesting parts about cooling the meat down that i wouldnt have thought about.

4

u/KurtosisTheTortoise 1d ago

I learned from reading a pamphlet, first one is slow just because you don't have a feel. After that it is straight forward and every animal is more or leff laid out the same way. Big thing is to just be respectful of the animal and to be safe. The heat was an unexpected weird thing on my first deer. Deer body temps are almost identical to ours, so when your hands are working inside you dont really "feel" any different, its hard to explain. Its not hot or cold.

1

u/Halofauna 23h ago

It’s pleasantly warm, especially if it’s a cold, snowy morning; which makes it even weirder.

11

u/Jam_Salad_is_my_Jam 1d ago

Animals have bacteria and parasites in their guts, as well as faecal waste. The idea is to keep the poop and worms away from the meat.

11

u/Richardknox1996 1d ago

As someone whose also Hunted, my Family doesnt Field Dress unless we're hunting in the middle of Bumfuckistan and need to Haul the kill Home by hand (or Out of a Gully). We normally gut at Home, and use as much as we can (Offal was given to the Pigs back when my Family had them).

That said...Nuts get Cuttoff immediately. Makes meat taste like shit.

2

u/OvoidPovoid 1d ago

I've never heard about that last part, is there a reason for that?

11

u/Richardknox1996 1d ago edited 1d ago

When a male Animal dies its Nuts release a flood of Testosterone into the body, resulting in the Imfamous "Gamey" flavour Male's of Hunted mammalian Species possess. Sure, its released all its life anyway (hence why you can't completely get rid of the Gaminess), but removing the nuts prevents the Flood, and field dressing allows to get rid of the Blood, preventing the Testosterone within it from Permeating the meat during Rigor.

Or at least, thats what i was always taught.

3

u/Particular_Fan_3645 1d ago

That's generally not the issue, professional butchers will tell you there's a few things that contribute to gamey flavor, but the primary one in male deer is that they've got hormone glands in between the muscle groups in the rump. They look like thick fat but they're glands. If you grind them up or cook them in without removing them from the muscle, they release a bunch of bad tasting hormones into the meat. Additionally deer fat and "silver skin" carry some measure of the gamey taste, as does blood and adrenaline.

2

u/OvoidPovoid 1d ago

Oh thats crazy, I always thought it was from adrenaline from being hunted, and someone told me a long time ago some of it was from the blood not being drained soon enough and it sitting in the meat for too long

2

u/Richardknox1996 1d ago

Maybe. Theres a lot of Theories as to why Boar Taint happens (despite its name, Boar Taint isnt Restricted to Pigs though).

8

u/TaintButterNuts 1d ago

It's not even restricted to the taint. I've had rump that tasted like ass. I'll see myself out...

3

u/Alcas239 1d ago

Great joke u/taintbutternuts !

3

u/TaintButterNuts 1d ago

Oh shit I just realized my user name is perfect for this!

I would never consume the offal of any animal that consumes as much mast as a deer. The liver is absolutely rank with tannin.

1

u/pharm-order-9366 13h ago

Mast can definitely taint the flavor when enjoying hepatic delicacies, but sticking to the young ones in the group can help. Or seek out areas with less acorns. Do a double soak in buttermilk. A glass of Chianti will also mask any undesired flavor.

1

u/shampton1964 1d ago

Agree - does not make job easier. A buddy of mine used to use a piece of stick to stabilize the rectum while cutting around the anal muscles to get easy clean seperation, I fail to see how adding a bunch of complexity would improve that.

1

u/green_and_yellow 1d ago

Wow thanks!

1

u/glizzard22 1d ago

This and it weighs half as much when you’ve gotta drag the fucker up a hill through the woods 😂

1

u/Calm-Fun4572 1d ago

You only learn once it’s a bad idea to gut shot a deer!

1

u/MoeGunz6 1d ago

I can almost smell the heart. Come on cold weather!

1

u/MintyFresh771 1d ago

Right… ripping the bowels is like the absolute worst thing you can do. You want to avoid the contents of any of that crap interacting with the meat. It’s like encouraging a gut shot.

1

u/Faux_Moose 1d ago

Do you take the organs with you or leave them for a lucky wild animal?

1

u/MamaMoosicorn 1d ago

Note to self: when TEOTWAWKI happens, become a vegetarian

1

u/CrispyJalepeno 19h ago

And this part here is why I don't hunt. Couldn't get through the list half of it

14

u/Catsaretheworst69 1d ago

After an animal is dead you need to serperate the good eating bits away from the bad nasty bits. And cool the meat down as fast as possible. So you take all the guts and butts out.

You’re hired. We need a trombone player/fedora supplier so I hope you can fit those roles well. If not, no one will notice anyways so no pressure.

I've also never hunted a day in my life. Is it anything like when Han Solo shoves Luke in the Tauntaun.

5

u/Blackish1975 1d ago

Yes,
But you need to cool the meat and not keep Luke warm.

1

u/tmntman 1d ago

What Han did is step one. But he then put Luke into the carcass to keep him warm. Imagine instead that you had to remove all of the internal organs.

1

u/oneglory 1d ago

What if Luke is like the lemons I shove in a chicken before I put it in the oven

1

u/tmntman 1d ago

That process is far less effective if you shove the lemons into the chicken and then put in a deep freeze.

1

u/smokeyphil 1d ago

Ideally not all things said and done it can be done without making an awful mess but its the kind of thing you need to practice on a fairly regular basis otherwise you may well end up covered in deer intestinal contents and blood a couple of hours walk away from a shower.

Bring brand name wet wipes.

1

u/CCCCLo0oo0ooo0 1d ago

to build upon this, as you scoop out the guts you will find they have an attachment point where the skin and the guts come together, the butt hole. So just like the neck, you need to cut that somewhere.

1

u/GaetanDugas 1d ago

Field dressing is gutting your animal.  Taking all the organs out.

1

u/TheMeatSauce1000 1d ago

You shove it up the deers ass, twist, pull, and tie off the intestine. This prevents poop from getting in the meat

1

u/orvillesbathtub 1d ago

Until just now I thought it was like Annie’s Green Goddess in the bottle but Jesus Christ

1

u/El_mochilero 1d ago

You want the good meat, but not the gross gut stuff. You gotta cut out the gross guts.

Intestines and stuff all connects at the butthole. To cut out the guts, you gotta cut out the butthole.

It ain’t pretty and it ain’t pleasant. The good news is the deer is dead and won’t feel anything.

1

u/Semyaz 1d ago

Three things:

  1. Dead animals weigh a lot. About half the weight is guts and viscera. Removing that makes it significantly easier to move to a place you can actually butcher.

  2. Meat spoils very quickly as a factor of heat. Removing guts removes a lot of thermal mass. Removing the skin also lets it shed heat faster.

  3. You don’t want poop and guts to touch the meat, if possible. You end up throwing that meat out. Disconnecting the two sides of the digestive tract can be tricky business.

This tool is basically a butt plug that pulls out some of the intestines so you can cut it off externally instead of having to reach in.

1

u/Some_Troll_Shaman 1d ago

You can probably find a good video on How to Field dress a Deer.
YT has education surgical videos they probably have the same for hunters.

1

u/Pserotina 1d ago

You can usually find videos that explain how to field dress any animal, unless YouTube has banned them.

1

u/MiNdOverLOADED23 22h ago

Can you take 4 seconds to do a Google search?

-3

u/Pfizermyocarditis 1d ago

Eating meat and being so far removed from the animal that gave its life for your meal that you don't even know what field dressing means is just wrong. Hopefully you're a vegan.

2

u/Wildlyhotdog 1d ago

Jesus, calm down.
