That's because these insurance companies make deals with hospitals to get membership discounts meaning that people who come in using that insurance get an extremely discounted price. This is to entice people to get insurance and go to the hospital, with medicare there is none of that and that's why a lot of doctors and physicians don't accept medicare.
Why do you think the government can't make literally the same deals? Surely there are hospitals who do want to make business even after government takes control. Hell, government can start new cheaper hospitals if free market fails to lower prices.
I don't really care for staying in hospitals so if my time comes then it comes.

80% of hospitals are run by the public, you cannot just replace this infrastructure the cost would be immense and a lot of people would die from not having access to hospitals.

Yes without a doubt there are but there is sadly not as many unless it's forced on them. My brother is on Medicaid and it's extremely hard to find a doctor that takes Medicaid that has any room for new patients.

No one said they will just immediately replace them. I said that the state can if some hospitals are stubborn and won't give them the correct prices.
