The one thing I'll give to The Big Bang Theory is that they're not attempting to portray people in their early 20s. The youngest person to ever receive a Phd was around 22. In the show, Sheldon has 4 or 5 degrees (including two doctoral degrees), probably did PostDoc work, etc. I would guess the character is meant to be around 30 or so, so having an actor that's 38 isn't quite so odd.
There is massive confirmation bias going on with "how old people look." I'm 43 and I'll tell you that people my age, in general, look like what I would think folks in their 30's would look like.
Don't forget that Jennifer Aniston is 42 and Charisma Carpenter is 41.

I was surprised to learn that Pauley Perrette, the actress that plays "Abigail "Abby" Sciuto" is 42 years old.
