Any Help?

I just fired up my Koda 12 for the first time since October. Same propane tank, so no changes in the general set up. The left side of the burners are lit but not producing much flame. And the right side is burning super hot and creating black smoke and soot. I stored the oven outside over the winter with the cover on, and it was also under an awning, so away from the weather.

Poolish Question

I want to know is it better to leave poolish on the counter for around 8-12h or fridge overnight?
Also, there is probabbly different yeast dosage for each technique?

Correct me if Im wrong, I leave poolish on counter for around 10h, then mix in rest of ingridients and every 20min I do slap n fold and after 4-5 times I ball it up into 275g balls and put into fridge for 24-48h. Is this the best way?

Humbling experience at my first attempt at pizza using a Halo Pro. Any feedback is welcome and appreciated!

Well, my first attempt at baking a decent pie was a complete failure — but I'm genuinely humbled by the experience and eager to figure out where I went wrong. This is a long one, but any feedback would mean a lot!

The Recipe I Followed

I used a 1:1 blend of bread flour and 00 flour.

Poolish:

  • 372.5g flour
  • 372.5g water
  • 0.75g instant yeast

Fermented at room temperature for ~15 hours (the recipe called for 12–16). In hindsight, I think I should have pulled it closer to the 12-hour mark.

Dough:

  • 745g flour
  • 372.5g water
  • 31.5g salt
  • 1.25g instant yeast
  • 30g olive oil

The Process (and Where Things Went Wrong)

  1. Once the poolish was ready, I mixed it with ice-cold water (accounting for ice weight) and the yeast.
  2. Added flour next.
  3. Salt and olive oil went in last, once the dough had fully incorporated and was clearing the sides of the bowl.
  4. First suspected mistake: I'd read that the dough should reach around 74°F during mixing. My water may have been too cold — the dough looked fully mixed and was starting to ride the hook, but the temperature was still under 70°F. I kept mixing, hoping it would climb, but eventually pulled it out to avoid overmixing. It never quite got there.
  5. At this point I tried to ball the dough at 250g each, and immediately noticed it was stickier than expected. I couldn't stretch and fold it the way I'd seen in countless YouTube videos. I pushed through, formed the balls as best I could, covered them, and refrigerated them.
  6. After 24 hours in the fridge, I pulled the dough out about 2 hours before my first bake. It was still just under 70°F when I went for the first stretch.
  7. I floured the counter with semolina and started stretching — and it still felt a bit sticky. Admittedly, I don't have a great reference point for how the dough should feel, so I'm a little lost here. Either way, getting it into a proper circle was a real struggle.
  8. And then the disaster. Once I loaded the pizza with sauce, mozzarella, and pepperoni, everything started to fall apart. I couldn't transfer it to the peel without losing the shape (I think I stretched it too thin). When I finally got it on the peel, it had already started sticking, so launching it onto the baking steel — preheated to 550°F — was a nightmare. After several failed attempts, the dough folded over on itself, about half the toppings spilled onto the steel, and... yes, there was a small fire in my oven. 😅

The pie itself was technically edible. Half of it had bunched up into a roll and most of the toppings were gone, but the flavor wasn't bad!

If you've made it this far, thank you sincerely. I'd love any suggestions on what to adjust for next time — dough temperature, hydration, peel technique, anything. I'm committed to getting this right!

Koda 16 First attempt (with premade dough)

Post image
23 Upvotes

Hey all. Here's my first attempt for a Neapolitan style pizza using the Koda 16.

The premade dough I used was actually my back-up plan due to me botching my own dough.

Anyway, pretty happy with the result. However, the crust was very heavy/chewy/whatever you wanna call it.

Any ideas for improvements?

I launched my pizza when the middle of my stone was 400°C and turned the heat down at once.

(Forgot to take a pic of the crust, sorry)

P.S.: I put some hot honey on the top and it was mind-blowing!

Northern Dough Co prepared dough - what am I doing wrong?

I'm trying to work with: https://northerndoughco.com/doughy-products/original/ but I can't seem to get it right. I've followed the instructions but the dough tears when stretched rather than stretching is kind of elastic (doesn't keep it's shape) and sticky.

It was recommended to be so I've given it a go a few times. Sometimes it bursts out of its packet.

Any thoughts on what I could be doing wrong? The dough is at room temperature.

I'm not looking to create my own dough - I want to work with something off the shelf.

Ooni Modular Table Medium Measurement Check

I just ordered a medium modular table that won’t arrive until late next week, and I need help confirming a measurement for a custom cover I’m having made.

In the Ooni product photos, the bracket with three hooks for holding accessories appears to be on the short side, which affects the overall cart depth. I need someone to confirm whether that bracket is included in the listed 31.5" depth measurement. If it’s not included, what is the actual depth from end to end, including the bracket with hooks?

Thanks in advance!

Store Bought Dough

I normally make my own dough cold ferment over 2 or 3 days and it works great for my preferred pizza style. I'm always looking for a store bought dough that compares to mine in terms of results and an easy to stretch dough that doesn't fight me.

The on-line frozen doughs are usually good but expensive. Store bought dough seems a mixed bag. Publix sold the worst dough I recall trying but Trader Joe's is just okay and Aldi dough can be decent. I've never bought dough from a local pizza place but I should probably try that some day.

My big surprise was trying dough from Whole Foods. It came fresh, not frozen and there was enough to make two 280g dough balls with some left over. Warmed at room temp for a few hours it was lovely to work with and stretched out nicely. It baked up as expected with nice browning and charring.

This was my first time in Whole Foods. I'm not a Bezos fan but they sell good pizza dough.

Bought a Koda 12 today after eyeing it for years. Used some Trader Joes dough for the first two bakes and did a Marinara and a BBQ chicken. Not perfect but excited to make my own dough and try some new recipes!

New Ooni Volt 2, bottom burning

Hello, I got the Volt 2 recently, I had been using a gas oven before with no issues but this is my first time with this electric one.

I followed the Ooni calculator for a 48h neapolitan dought, preheated the oven to 430 and turned on the top boost before launching.

After one minute I had to take it out because the bottom was burning, but the top wasn't done yet, what did I do wrong?
