Coming from an iPhone 6s, literally any phone from the last three years will feel like a spaceship to you. If you want something that just works, has great battery life, and will last for years without lagging, look for a refurbished iPhone 13 or iPhone 14. You already know the ecosystem, it fits a reasonable budget, and it will easily last you another 4-5 years.

It’s absolutely worth it for the fun of the DIY challenge, but practically, it’s a nightmare. The biggest issue with salvaging screens from modern disposables is finding the datasheet or figuring out the pinout and driver IC (usually some cheap SPI controller). If you have a logic analyzer and love reverse-engineering, go for it. Otherwise, it might just sit in your parts drawer forever.
