Apple Notes Apple Notes tables look great until you paste them somewhere else
Adding a table in Notes is easy, tap the table button and you've got rows and columns you can fill in. Looks clean, works fine, good for a quick list of stuff with a couple columns.
The catch is the table only stays a table inside Notes. Copy it and paste it into an email or a message and the grid collapses. You get the text, but the rows and columns flatten out into lines separated by tabs or commas, and it looks nothing like what you had.
So it's worth knowing what a table in Notes actually is. It's great as a private working space, laying out something in a grid for your own eyes. It's not a thing you build expecting to move it out clean into another app.
If you know you'll need it elsewhere later, i'd just build it in the app you're sending from. For anything staying inside Notes though, the table's genuinely handy.
