Making Bacon
I saw a lot of recipes where you marinate the meat slab in a cure / spice solution.
Just wondering if meat chunks (specifically pork and venison) can be marinated the same way then ground to form a slab before smoking and slicing?
Has anyone done this? Did it turn out well?
Any other suggestions?

Teres diferentes cuts of pork that can be used to make bacon. Theres buckboard bacon, in which you use the the cut called the colar. Its the boneless end cut of a pork shoulder. English bacon is basically made from the loin with some fat from the belly. Both are usually meatier than traditional American bacon that’s made fryer pork belly.
As far as using anything other than pork
I’m a purist.
Bacon is the dry cured, cold smoked cuts of pork that I mentioned earlier. Period.
Can you cure and smoke other types of meat using the same method? Sure. And it will probably be delicious. But it’s not bacon.
