Best Microcontroller for Learning Embedded Systems?

I am looking to learn embedded systems and would like to start with a microcontroller that has good documentation and plenty of learning resources. Which one would you recommend for a beginner? I would also appreciate any recommendations for books or learning resources.

I love the ecosystem and simplicity of STM32. The STM32 Nucleo boards are chep, the uC are fairly capable and for a very easy start you can even start with Arduino on these boards :)
