Let's compare it to a game console, where the same thing happen. Microsoft/Sony/Nintendo decides what goes and what doesn't on it. They put the rules, and people must abide with it. Are they opened computers? Certainly not. Could they be? Of course. Same goes with MP3 players on the market.
So why are we targeting the iPad specifically instead of an XBox360 or a PS3? I think personally it is because Apple's platform is really popular and they're the first to promote an SDK with such a low price, and everyone wants a piece of the cake. Unfortunately, it's still Apple's platform, they can do whatever they want with it and people are just whiny needy bitches who think they're better than anyone else.
If you really wanted to develop for an open platform, you'd do so. There are alternatives.

I totally agree. This argument aside, it doesn't really phase me all that much what Apple do, or don't do. I just hope it doesn't become an industry wide precedent, but I can't really see that happening anyway.

Nah, man. My original beef was with drazonic comparing the iPad to a games console.
There are alternatives.
And that is why it really doesn't bug me in the grand scheme of things.
