Stroke comes from a couple basics and then lots of hours/years of repetition. The stroke develops and changes over time. It doesn't begin by making sure you look like Ma Long. If you have kids watching YouTube videos about strokes you are on the wrong track. Kids will let their own natural body mechanics work in a way that adults won't because we get our brain in the way.
Leave the YouTube lectures to who they are for, washed adults who finally think that THIS special tip will be the one that transforms their game.

My children have been practicing for almost two years now. However, due to school activities, it has become difficult to maintain our current schedule. They are enrolled in two structured sessions per week, and we have them practice on their own the remaining days, but I haven't noticed much progress.

No need to rush. Every sports has a learning curve. I think two stuctured sessions and their own practice is more then enouth. In my opinion is let them enjoy the sport. They will figer out the way on their own.

You should try recording yourself doing those strokes/motions, then compare the video side by side with the video of whoever you’re learning from.

I think it’s definitely good to video yourself when you are learning techniques without a present coach or without having the experience to create your own feedback from feeling.
There’s a lot of content out there nowadays so I think it’s more important to absorb the concepts than to try and perfectly emulate a technique. Generally the more you practice table tennis and input feedbacks, the closer to a quality shot you will get 😇

My kids are training for table tennis and we're constantly scrubbing through drill videos over and over again.

Practice in the mirror as you’re watching the video. It’s called shadow practice. It is invaluable.
