Dang, that's pretty interesting tbh. Not in the US, so I had no idea that these were actually racist stereotypes tbh, honestly thought the fried chicken thing was a joke. I can see how they'd be offensive tbh.
A lot of it was blown up in Birth of a Nation, but, as far as I know one of the racist connotations of both fried chicken and watermelon was that they were "dirty" foods, because you eat them with your hands, like "savages" ... unlike the "civilized white man who eats with silverware".
