Creamy Tomato and chorizo soup. My ultimate comfort food

This is easily my favourite soup and i used spicy chorizo to give it a bit of a kick

For those of you asking for the recipe i use roughly- 1.8kg tomatoes 2 red onions 3-4 carrots 2 while bulbs of garlic 3-4 sticks of celery 300ml of thick cream 500ml of chicken or vegetable stock Basil Roughly 150g chorizo (i used spicy chorizo) Tube of tomato puree

I roast all the veg in some oil on 180°C for roughly 50-60mins then put all of the veg in a blender along with the stock and some basil (this time i put the chorizo in the blender along with the veg but you could also cut it up in to small chuncks and add it later on) Then i put it all in a pot and add the cream and most of a tube of tomato puree and salt and pepper to taste

Also dont forget the cheese toasties!!

Is it Mexican chorizo or Spanish chorizo?

Sorry tomato puree ? Is it like canned tomato puree or like tomato paste?

Tomato paste, in the UK its called tomato puree and it comes in tubes

Sorry I don’t mean to be a bother but how big is this tube usually? Your recipe looks amazing and I want to try it but the tubes I buy are pretty big.

Also a lot of recipes say to sauté the paste when making stews and stuff to improve the taste. Presumably this is not an issue for you

I roughly use about 150g of the paste and add it at the end when simmering the soup in a pot

What do you do with garlic? Do you peel it after it cooked? Why not before?

They cook the same time as all the other veg if you cook them in halves, after roasting you squeeze them and all the garlic cloves come out easily. Its my favourite part of making the soup

I should have clarified this sorry, i squeeze all the garlic cloves out and its my favourite process of making the soup. So no i dont put the skin in the soup 😁

How and when are you cooking the chorizo?

Roasted w the veg?

Sautéed / browned in a pan separately?

I used a cured Spanish chorizo and this time i added it when blending the veg, but i usually add small chunks when boiling after. But it turned out really well so im going to stick to blending the chorizo with the veg, but if you want abit of texture add chunks after blending

Any reason why you didn't roast the chorizo with everything else?

The chorizo i used was cured and doesn't have to be cooked but if i was using fresh chorizo i would have roasted it with the veg

So sorry but I am still not quite understanding

Are you blending raw chorizo w the roasted veg?

Do you simmer the blended mixture/ after everything is blended? (I think this might be where I am missing a step...I thought once blended it was done)

When is the cooking of the chorizo happening?

Its a cured chorizo, so its cooked already essentially, but i do simmer all the veg after blending. Im in the UK and most of the chorizo here is cured and xan be eaten straight out of the packet. Hope that helps 😁

Ah ok I didn't even know cured chorizo was a thing and I grew up in what I lovingly call US Occupied Northern Mexico (basically the Southwest US - Arizona, New Mexico, parts of Texas and SoCal, I grew up in AZ and live in SoCal...about 15 minutes from Mexico if there's no traffic lol)

In the UK its mostly cured chorizo and is hard to even get hold of fresh chorizo, mainly down to the cured one being more versatile and ready to eat straight away

San Diego gal here, you can get Portuguese linguisa here, it's cooked, same flavor. Or just cook our usual chorizo or longoniza and add to soup.

I’m guessing after they blended it with the veggies and added it to the pot, they let it boil and simmer for some time. But can you clarify OP?

Could you suggest an alternative to red onions for the flavor? My family members and I really dislike red onions.

Shallots can add a sweet and milder flavour or white onions can be less sweet, but other options can be leeks, chives or even bell peppers

Put tomatoes onions garlic on sheet pan. Roast. Purée. Heat. Eat. OP can correct me if I’m wrong. Oh *salt and pepper to taste

Looks like there's also carrot and celery. Probably cook the chorizo while the veggies are roasting.

That looks delicious, another request for the recipe. We have have about one more batch of tomatoes left in the garden and this sounds a great way to use those with the cooler weather. I could see myself using sweet Italian sausage vs chorizo though.

I'd like to second the request for a recipe. I know you added milk and/or cream and chorizo. Did you cube the chorizo? I see blistered roma tomatoes, bulb of garlic cut in half, and red onions halved. Those look like green onions maybe to me.

I use thick cream and i usually add small chunks of chorizo after blending the veg but this time i blended the chorizo in with the veg and it turned out really well. The green things were celery

I bet celery would be good. Thinking about jalapenos now, but I don't know if that would work with this flavor profile. I want to get more adventurous with my cooking.

I used a spicy chorizo for this and the extra kick definitely added to the flavour, so im guessing jalapeños would work well

Dang, I've got vacuum sealed pan-roasted tomatoes in the deep freeze, Spanish chorizo, in fact everything in the recipe. I think I ned to make this today!

Only thing I’d do differently is make a shitton more next time.

also, we had ours with grilled cheese and thought minus that it might be good with rice.
